Roast Beef With Vegetables and Gravy
I LOVE a good pot roast. It'south the ultimate condolement food, but I really do non savor mushy veggies. I have establish my favorite method for tender fall-apart beef with perfect crispy and caramelized veggies. Oh, and did I mention the like shooting fish in a barrel and flavorful gravy to deluge it all in? I know, I'm drooling as well.
Heed, I am the (cocky-proclaimed) Queen of one-pot meals, however , sometimes an extra pan is worth it. And so this pot roast repast requires two pans (gasp!) I know, I know just trust me on this one. When you taste the crispy potatoes and sweet caramelized carrots, you lot will be a believer. For the roast, I use my Instant Pot. It is and so easy and just infuses the roast with so much flavour. One time you take the pot roast out to shred, you lot add a tapioca mixture into the leftover liquid and bring it to a boil (using saute manner). Let it thicken and viola, you've got a gravy to pour over your already delicious meal!
*NOTE- I use Tapioca Flour or Arrowroot Flour

Perfect Pot Roast with Veggies and Gravy
Step upwards your family dinners with this perfectly tender pot roast, crispy potatoes and sweet caramelized carrots. Don't forget the easy and flavorful gravy!
Pot Roast
- 1 Tbls Avocado Oil or olive oil
- ane Beef Chuck Roast 2-3 lbs
- two cups Broth I utilize Bonafide Provisions Beef Broth
- 2 Bay Leaves
- ane tsp Dried Rosemary
- 1 tsp Dried Oregano
- 2 tsp Salt
- 1 tsp Pepper
- 1 Yellow Onion sliced
- 2 cloves Garlic minced
Veggies
- four Carrots peeled and cut into 1" chunks
- 2 lbs Infant Crimson Potatoes or petite golds
- 1 Tbls Avocado Oil or olive oil
- 1 tsp Table salt
- ½ tsp Pepper
Gravy
- ¼ cup Room Temperature Water
- 2 Tbls Tapioca Flour
Roast

Plough the Instant Pot to saute mode and add together in the oil. Cut the roast into 3-four large sections. Season with table salt and pepper and dark-brown on all sides. Add in the goop, rosemary, oregano, bay leaves, garlic and onion and put the lid on

Make sure steam valve is closed. Turn Instant Pot to pressure cook and ready time for 60 minutes

Once the roast is done, allow the Instant Pot manual release for ten minutes, and then quick release. Remove roast from the liquid to shred (should be very tender) Also remove the bay leaves and discard
Veggies

While the roast is in the IP. Estrus oven to 425' and place veggies on a sheet pan. Coat them with oil and salt and pepper. Cook for 25-30 minutes tossing halfway through
Gravy

Mix the water and tapioca flour in a minor bowl and add together to the remaining liquid in the Instant Pot (with beef removed) whisk together and turn to saute mode. Bring to a boil and whisk again. It will thicken after a few minutes (2-5). Plough Instant Pot off and transfer gravy to drinking glass measuring loving cup
* If you desire to cook the veggies in with the roast, set the cooking fourth dimension for the roast at 45 minutes. Once that is done, add in the veggies and melt the remaining 15 minutes
*If you want the gravy to be even thicker, you tin add together more tapioca flour. Just be sure to mix it with a little room temp water showtime before adding to the gravy or it volition clump
